The meal went well, thanks to your suggestions :ymhug:

I kept the menu very simple and savory: a four bean salad drizzled with olive oil, placing the vinaigrette and a variety of herbs and spices in front of her to season with as she liked; an avocado, green pepper, tomato, red onion, cucumber salad also lightly drizzled with olive oil; baked chicken with brown rice ( It turns out that she is not a full-on vegetarian after all; she just cut out red meat); fresh blackberries and blueberries for dessert; and fruit infused spring water. She thoroughly enjoyed the meal and took home most of the leftovers. :-bd

Agree W/ Lisa - sounds a bit like Paleo (my diet). Lots of easy recipes on the internet.

Just in case any of you are pesto fans,---the question being how to do without the cheese if going vegan:

--1 cup of packed basil leaves (fresh if possible)
--1/3 cup (or a bit more if desired) of slivered almonds
--couple teaspoons of garlic powder or a few cloves of garlic microwaved/sauteed in olive oil
--1/2 c. (yep!) olive oil
--water....when needed to adjust consistency
--lemon juice....for flavoring if desired
--salt...start with 1/2 teaspoon and add more or less of you wish.

Will need to process in your available blender/food processor and keep pushing down the leaves between spins if necessary. All ingredients adjustable to taste.

Done!.... I don't miss the cheese in this recipe and if enough is made, it get's placed into sandwich bags for longer term storage in the freezer. Great on pasta or on morning toast alone or with tomato slices.

Chimichurri~

1/2 cup fresh cilantro
1/4 cup flat leaf parsley to the food processor.

To the herbs, add 3 garlic cloves and 2 shallots.

Next add 1/2 cup white balsamic vinegar, 3/4 cup olive oil x_x

1 tsp oregano, 1 tsp salt and black pepper.

*Optional heat either 1/2 serrano chili or 1 red jalapeno remove seeds and membrane. Chop fine before adding to food processor and add to taste slowly.

Whip it all together and serve or store like your pesto. (Will keep about 1 week in frig)

Livens up roasted veggies (from the air fryer! :-bd ) tastes great over potatoes or stirred into a bowl of quinoa with fried mushrooms and kale.

I love using it to marinate and then baste flat iron steak or chicken fajitas but that's for another thread. [-x

That sounds like the most delicious and time consuming recipe ever!

The fun video made me hungry and I had most of the ingredients. Had a boat load of veggies for dinner.
